Pan-Seared Sea Bass with Lemon Sauce

Recipe: Pan-Seared Sea Bass with Lemon Sauce 

Ingredients:

  • Sea bass fillets, 2 pieces
  • Salt and pepper, to taste
  • Olive oil, to taste
  • Fresh lemon juice, 2 tablespoons
  • Olive oil, 2 tablespoons
  • Minced garlic, 1 clove
  • Fresh asparagus, a few spears
  • Sweet potato, sliced
  • Shredded red chili, to taste (optional)

Instructions:

  1. Season the sea bass fillets with salt and pepper.

  2. Wash the sweet potatoes, add 2 cups of clean water, and cook for 30 minutes until the water has completely boiled down. Remove, slice, and set aside.
    (Choosing smaller sweet potatoes makes them cook faster; be sure to scrub the skin thoroughly to remove any residual grit.)

  3. Blanch the asparagus spears in boiling water, then remove and set aside.

  4. Select high heat on the IH hob to preheat the skillet, then pour in the olive oil.

  5. Place the sea bass fillets in the skillet and sear until golden brown, about 3-4 minutes per side. Remove and set aside on a plate.

  6. In the same skillet, add olive oil and minced garlic, and sauté over medium heat until fragrant.

  7. Add the fresh lemon juice and blanched asparagus, and continue to toss and sauté for about 1 minute so the asparagus absorbs the flavor while remaining crisp-tender.

  8. Return the seared sea bass fillets to the skillet, cover with a lid, and continue to cook over medium-low heat for about 2-3 minutes until the fish is cooked through and fully absorbs the flavor of the lemon sauce.

  9. If you prefer a hint of spice, garnish with some shredded red chili for presentation.

  10. Done! Plate the pan-seared sea bass with lemon sauce and serve alongside the vegetables or with rice.
