Pan-Seared Beef Shoulder with Butter

Ingredients:
◆ Top blade steak (or flat iron steak), 200g
◆ Butter, to taste
◆ Ground rose salt, to taste
◆ Ground black pepper, to taste
◆ Olive oil, to taste
Instructions:
- Bring the steak to room temperature. Remove it from the packaging and pat the surface completely dry with kitchen paper towels. Season both sides generously with ground rose salt and coarsely ground black pepper.
- First, brush the pan thoroughly with olive oil. Heat the pan on power level 4 until the oil shimmers. Place the steak in the pan and sear for about 2 minutes; do not flip the steak during this time, but you can move it around the pan to ensure it stays in contact with the olive oil.
- After 2 minutes, flip the steak over and lower the power output to level 2. Add the butter to the pan to baste and color the steak. Sear for another 2 minutes, moving the steak around to soak up the melted butter.
Once the 2 minutes are up, remove the steak from the pan and place it on a wire rack to rest for 2 minutes. Letting the steak rest allows the juices to redistribute internally, ensuring a perfectly juicy and delicious steak ready to be enjoyed!
