Cooking Steps

  1. Prepare fresh, thawed sashimi-grade scallops and pat them completely dry. Size 2L is highly recommended.
  2. Preheat the pan thoroughly for about 3-5 minutes. (To check if it is ready, add a drop of oil; the pan has reached the ideal temperature when a faint wisp of smoke appears.)
  3. Place the scallops in the pan to sear. They will release a significant amount of moisture; do not shake or move the pan.
  4. Flip the scallops over after about 1 minute (at this stage, the first side should be about 30% cooked).
  5. Continue to sear until the released scallop juices completely evaporate and caramelize (reaching about 80% doneness).
  6. Remove the scallops from the pan, then gently scrape up the savory, sea-salted caramelized fond from the bottom of the pan to use as a flavorful garnish.
